today's lunch: salad with Factoid Dave's awesome dressing*, butternut squash, hummus in ww pita and sweet kale chips


Despite yesterday's "epic fail" in the kale department, I am not willing to give up on the hallowed veg for our Mr. Charles.  I had to replenish Jonny's kale chip stock last night, so I tossed a small amount with agave and cinnamon and put it on a separate tray in the dehydrator.  This morning, I coaxed Charlie to try one.  He was turned away from me, so I couldn't see his expression.  He took a bite and paused.  It was a fairly long pause and I was bracing myself for, "I don't like it!"  But no!  He said he DID like it!  The only problem was that the agave was all sticky and it was kind of hard to get the chips off of the teflex sheet without them getting all crumbly.  I might try maple syrup next time and see how that goes.  Does anyone have experience with making sweet kale chips?

Cross your fingers with me that he actually eats them at lunch today.




*Factoid Dave's Chili Lime Dressing
Low fat tofu mori nu
3 tablespoons Fiesta lime chili powder (Mrs. Dash Fiesta lime chili or from Fred Meyer bulk bin)
1 tablespoon agave syrup or honey
Juice from 1 lime or some type of acidic like lemon juice or apple cider vinegar
1 tablespoon liquid aminos

Blend. It should have lots of flavor. Add more chili powder or any of the following ingredients for desired taste.
