Everyone loves these cookies.  Seriously, they are the best cookies I've ever had, and I'm generally a pretty modest person.  I adapted the recipe from one I found on food.com, replacing the oil with applesauce and some other tweaks to make them healthier.  These are the cookies that Charlie requested for his birthday treat at school and they were a big hit.  I know you will love them too!    

Oatmeal Walnut Chocolate Chip Cookies
Makes 18-24 cookies

1/3 cup smooth cashew butter
2 tablespoons applesauce
1 cup sweetener of your choice
1/3 cup almond milk
1 tsp vanilla extract
1 cup whole wheat flour
1 cup rolled oats
1/2 tsp baking powder
1/2 tsp salt
1/2 cup non-dairy chocolate chips
1/2 cup walnuts

1. Preheat oven to 425

2. Grease a baking sheet or use one with a non-stick silpat mat like I do.

3. Whisk together the first five ingredients until very smooth.  Add remaining ingredients and stir to combine.  Be sure to mix in thoroughly the baking powder and salt, you may want to stir these into the flour first.

4. Drop batter by large spoonfuls onto prepared baking sheet.  Bake for about 10 minutes, or until tops just begin to crack.  Remove from oven and wait 10 minutes before transferring cookies to a plate or wire rack.
