We were in Chicago last weekend and we ate some amazing meals.  One of our favorite dishes was a flatbread at a restaurant called Green ZebraI attempted to recreate it a couple night ago and just heated up what was left for lunch today.  Charlie also took some to school, as his teacher was rewarding the class for good behavior with a pizza lunch and he didn't want to eat it!  (I told him it was ok to eat every once in a while, but he is SERIOUS!)

It's an easy weeknight meal with a nice salad.

I didn't write down exactly what I did, so this is approximate... play around with the seasoning and make it to your liking.

White Bean Flatbread

One whole wheat pizza crust
1 can of white beans (cannellini)
I head of broccoli, chopped into florets
1/4 red onion, diced
2 cloves garlic, minced
Liquid smoke seasoning
Hot sauce - I used peri peri, about 1 tsp
Salt and pepper

Bake the whole wheat pizza crust per directions

While baking, lightly saute broccoli, onion and 1 clove garlic in vegetable broth or water

Blend or process white beans with other garlic and seasonings to taste.  Go light on the liquid smoke and hot sauce and adjust. 

When crust is slightly cooled, spread bean mixture and top with broccoli and onions

I added some Habenero sauce to mine today - I'm a Spice Girl.
